Tomatoes marinating


Tomatoes marinating in olive oil, balsamic vinegar, lemon and a little Dijon mustard, with raw crushed garlic and chopped fresh basil leaves between the tomato slices.

August/September is tomato season in Ontario, the only time of year we can make this dish.



We ate this dish last night with a frittata made with cheese and red and yellow bell peppers. We marinated tomatoes again tonight to have with spaghetti pesto and Portuguese chicken with hot sauce. It's the simple things.

I've settled on Kate Mosse's Labyrinth (parallel 13th and 21st century stories where our heros hide and perhaps rediscover the Holy Grail in Languedoc, France). The reliable Susan Hill said she liked it and I need something fat to read on my week off work.

Bill made the sandwiches. What a sweetie! Ontario tomatoes with gruyere cheese. Delicious!
